Thai Fried Tofu with Sautéed Hedge-Hog Mushrooms

Serves 2

Ingredients:

  • 2 pc silk Tofu
  • 1/4 lb Tapioca Starch
  • 1/4 lb Corn Starch
  • 1 Qt peanut Oil for Frying
  • 1 lb wild Hedge Hog Mushrooms
  • 1-tablespoon butter
  • S&P
  • 1/2 cup Coconut Milk

Instructions:

Use a silk tofu, Press Gently to Remove a little Water, and pat dry. Roll the Tofu in a mixture of 1/2 Tapioca starch and 1/2 corn Starch, and Fry in Peanut Oil heated at 350 degrees, cook Until Crispy and Hot in the Middle. There should not have any color while Fried. In the Meantime sauté Hedgehog mushrooms in Butter and shallots, salt and pepper, splash the Mushrooms with Coconut milk and put them in the oven to cook slowly for approx. 3 minutes, so the juices come out. Continue to cook on top of the stove until thick. Spoon Over the tofu and garnish with chives and Sprouts.
