Yuzu Infused Sake

Serves many
Ingredients:

• 1 ½ liter high quality sake in the bottle
• 4 whole yuzu limes (buy at Japanese food store)

grate the yuzu citrus and then squeeze all the juice out and mix with the rind add to the sake , Shake, and let sit room temperature for 4 days . Chill and drink very cold straight or on ice

1 ½ CUP SHALLOTS (MICRO BRUNOISE)

1 CUP CHICKEN STOCK

6pc ARTICHOKE HEARTS (RAW) SAUTE WITH GARLIC ADD CREAM.
3/4 QUART HEAVY CREAM

1 CUPS SOUR CREAM
1 EACH LEMON (JUICE AND ZEST)
1 HEADS ELEPHANT GARLIC
3lb SPINACH (SAUTE AND COOL QUICKLEY)

BRIE FONDUE:

¾ QUART HEAVY CREAM
2 WHEELS BRIE (RIND REMOVED)
1 CLOVE ELEPHANT GARLIC (ROASTED)

 

DRESSING FOR CELERY ROOT SALAD:

2 ½ CUPS MAYONAISE
2 CUPS SOUR CREAM
1 CUP RICE VINEGAR
½ CUP SUGAR

LEMONGRASS PORRIDGE:

1 CN COCONUT MILK
1 CUP RICE
6 cups water
3 STALKS LEMONGRASS

1 1/4 cup crack blk pepper
9 Garlic Cloves
3/4 cp lemon juice
3TBSP tobasco
1/3 cp +2tsp Worcheseshire
1 1/4 cp cider ving
1 1/2 cp onion juice
3 Qt cold water
1 lb+2oz Fresh Grated parmesian
4 Gal 2 qt Mayo
Wasabi paste to taste
Thin Down with buttermilk

6 dashes Worcestershire sauce
2 dash Tabasco sauce
2 stalk celery garnish
lime garnish
