Smoked Tomato Salad with Sugar Snaps

Ingredients:

  • 4 Vine Ripe Plum Tomatoes
  • 1/4 Cup Olive Oil
  • 2 Cloves Garlic
  • 2 Sprigs Thyme
  • 6 Leaves Fresh Basil Salt and Pepper
  • 1/2 Lb. Fresh Sugar snap Peas Split and Blanched

Instructions:

Place the First Six above Ingredients in an ovenproof Casserole Dish and Cover with Plastic Wrap, Put Small Holes in Plastic so smoke can absorb. In a 200 Degree Gas Grill with a small Amount of Wood Smoking. Cook the Tomatoes for 4 hours or until Very soft to the Touch. Let Cool Briefly and Peel off the Skin of the Tomatoes and place on A Plate. Garnish With the Blanched sugar snaps and the liquid from the Tomato in the Casserole Dish. Salt and Pepper To Taste.
