Stuffed Maui Onion

Ingredients for Onion Stuffing

1lb./4 oz. Maui onions, finely diced
OR
5 Medium-sized Maui onions, finely diced
4 oz. Unsalted butter
2 Cup Heavy Cream
2 Whole eggs
1 Egg yolk
½ oz. Cumin seed
½ oz. Salt
Pinch Pepper
2 oz Smoked Bacon Fine Chopped

Procedure for Onion Stuffing

Preheat oven to 400 degrees.

Filling:
 In a pot, on medium heat, slowly sauté the Maui onions and Bacon in the butter until translucent and tender (onions will not have color).
 Add salt, pepper and heavy cream.
 Let the cream simmer for about five minutes. Take pot off of heat. Add the eggs in one at a time, while whisking quickly.
 Let pot and mixture sit for five minutes, then pour mixture into a bowl and let cool.

Ingredients for Onion shell

• 6 Medium Maui Onion
• 2 oz course sea salt
• 1 fresh Bay leaf
• 4 oz unsalted butter
• 2 oz brown sugar
• 2 oz onion water

Procedure for Onion Stuffing

Peel very carefully only the skin on the of the onion keeping intact the Stem and the root. Place in a pot big enough to fit loosely, cover with cold water, Bay leaf and salt. Bring to a boil and simmer till tender, approximately 40 min. take out and drain. Take a small knife and cut into the onion a ¼ off the top. Take a fork and gently take the many layers inside the onion out until you have the last outer shell.

Place the onion shell in a bake - Proof pan adding the stuffing mixture to the shell till over the top , Sprinkle cumin seed on top, add the water, Brown sugar and butter to the pan and bake for 35 min or until golden brown, every 10 min baste the liquid over the onions.
