I lb Risotto Aborio Rice
12 pieces Shiitake Mushrooms sliced
1 lb Picked and Clean spinach
2 Tbsp butter
1gal Chicken Stock

Sautee the rice in the butter , add shiitake , add stock little by little and Sirring , bring down the liquid with the rice and keep adding while repeating the process till rice is tender then add spinach and finish with Butter , S&P
