Shiitake mushroom meatballs

serves 4
Ingredients:

½ lb ground beef
½ lb ground pork
1 egg
1 c. soft bread crumbs (2 slices bread)
1 tsp. brown sugar
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. freh ground ginger
1 minced Garlic
½ onion diced onion
12 oz Mishima sliced shiitake in broth package (drained and keep the broth)
¼ cup milk

Procedure:
Sweat onion and drained shiitake mushroom together until soft in a little butter and cool. Place ground beef in a large mixing bowl. Sprinkle with bread crumbs, onion, mushrooms, salt, pepper, ginger and egg. With hands, mix together until everything is well blended, adding broth and milk gradually until mixture becomes a paste (mixture will be quite loose). Rest 5 min. in cooler
Roll mixture into small balls, between 3/4 inch and 1 inch in diameter
Fry in butter in large heavy skillet, over medium heat, turning frequently until lightly browned all over. Place in a bowl which as been lined with paper towels. Add them into any sauce or can be frozen at this point.
