Ingredients:
3 cleaned Lamb loins
4oz white Miso
¾ cup sake
½ oz chopped Scallions
1 oz Grape Seed Oil
S&P to Taste
Procedure:
Place the Miso, Scallions in a bowl and slowly with a wisk, thin down the Miso with the sake, till a sauce consistency. Add the lamb loins in and cover completely with the Miso - scallion, sake liquid. Cover and refrigerate overnight.
Take and wipe off any excess miso liquid, place in a hot pan with the grape seed oil and sear all sides of the lamb. Place in a 400o preheated oven for 5 minutes while turning the lamb once. The loins need to rest a few minutes
Season with salt and pepper to taste and slice .
