Tomato Basil Sauce For Tofu, salad or vegetables

Serves 6

Ingredients:

1 qt tomato juice can
1 qt V8 juice can
2 cups diced onions
3 oz fresh basil leaves
2oz evoo

Procedure:
sweat onions in the olive oil till tender and no color, add tomato juice and V8 juice and reduce till thick, about 20 min add basil leaves then cook for 2 more min. Place in blender and blend for 2 seconds. Keep in refrigerator for storage
