Ingredients:
8-14 oz cakes firm tofu
20 "fork" bamboo skewers
Yakitori Grill with Charcoal
Dengaku Miso Topping:
7 oz red miso
7 oz sake
6 tbsp sugar
2 egg yolks
Procedure:
Place each Cake of Tofu between two cloth towels, place a weight gently on top and let stand on a slightly slanted surface to drain for 30 minutes.
Combine all of the Dengaku miso topping ingredients in a small pot and mix well stir over a low heat until Thick.
Cut pressed tofu into 5 pieces and skewer
Start grilling them on the yakitori grill and spread miso topping on top
Garnish with kinome leaves
