Shiitake Mushroom Quiche

serves 8
10 inch tart
Ingredients: Quiche

1pc bacon chopped
½ onion chopped
12 oz Mishima shiitake sliced mushroom
3eggs
1/2c cream fraiche
1-1/2c half &half
1/2 tsp salt
2 Tbsp chopped Parsley

Procedure:

Render the bacon till crispy on med. Heat add onions and sweat till tender, then cool down, in a bowl add all ingredients and whisk till smooth pour into shell and bake at 400o till golden brown about 20 min.

Ingredients: Parmesan crust

1 cup ap flour
1 teaspoon salt
Pinch cayenne pepper
6 Tablespoon cold butter
1.5 cups grated parmesan

Procedure:
In a bowl add all dry ingredients with your finger tips work in the cold butter till forms a ball, let rest in refrigerator for 1 hour and roll out in tart shell , pre bake the shell till golden brown @ 400o for 20 min and cool before you add liquid
