Purple Shiso juice

Serves 10

Ingredients:
• 1Qt Water
• 11 oz red Shiso leaves
• 1 cup sugar
• ¾ teaspoon Citric acid
instructions:
Place sugar and water in a pot and bring to boil add the leaves of the red shiso and cook in a boil for 30 min. strain and cool a little. Squeeze hard the leaves till no more liquid comes out. Add the citric acid to the purple water and cool. You should have about ½ qt of juice left. Bottle and remember a little goes a long way.
