2 gal Chix Stk. Reduced to glace
2 qt. Orange Juice brought to temp.
1.5 C Sugar
Cumin Seeds
(Need 3 pots to make sauce)
In 1st pot have Chicken glace prepared. Bring OJ up to temp in another saucepot. In third pot turn sugar into caramel and add cumin seeds to toast (you can smell the seeds toasting when it hits the hot caramel). Carefully temper the OJ into the caramel until totally combined. Lastly, combine the flavored OJ and Chicken glace together and continue to cook for 10 min. or until flavors are married.
