Meyer Lemon Crème Brûlée with Lemon Grass Ice Cream

Serves 6

Meyer Lemon Creme Brulee Ingredients:

6 Meyer Lemon
1/4 Qt. Heavy Cream
1/4 Qt. Milk
5 oz Sugar
2 Vanilla Beans , Split and Scraped
7 Egg Yolks

LemonGrass Ice Cream Ingredients:

8 oz whole milk
8 oz Heavy Cream
2 1/4 oz. Sugar
7 egg Yolk
3 Stalks Of Fresh Lemon Grass Smashed and Chopped up

Procedure for apple Brûlée:

Slice apple 1/4 off the Top . Core Lemons Very Carefully, taking all inside Lemon out to hold custard, No holes. Set aside . Bring milk, cream , sugar , vanilla up to a boil , whisk into eggs and cool down . Strain. then Ladle into Lemons ,fill Lemons up to top with Custard mix . Put Lemons in a 2 inch Sided pan then fill 1/2 way with warm water Place in oven and bake at 350 for 45 min. or until custard has set . Test for doneness , Sprinkle with Granulated sugar. Burn the sugar with a torch and serve.

Procedure For Lemon grass ice ream:

Bring Milk, Cream and Sugar to a Boil. Put Egg yolks in a bowl and Temper the hot Liquid into the eggs. Add Lemon Grass and let Steep 5 Min. Stir Mixture on a Double Boiler till it Coats a Spoon. Cool down, strain and freeze in ice cream Machine.
