Maui Onion Tarts
Serves 6
Ingredients
1# 4oz or 5 Medium size Maui onions fine diced
4oz unsalted butter
½ oz Salt
pinch of pepper
1 cup Heavy Cream
2 whole eggs
1 egg yolk
½ oz cumin seed
3 oz clarified butter
9 sheets of Phyllo dough
Procedure
In a pot on medium heat slowly sauté the onions in the butter till translucent and tender without any color, add salt and pepper and heavy cream. Let the cream reduce about five minutes. Take off heat and add the eggs in one at a time while whisking quickly. Let sit for 5 minutes then cool down in a bowl.
Take the Phyllo sheets one at a time and brush sparingly the clarified butter all over the sheets, lay the next sheet on top and repeat .Add the final sheet on top and don't butter the top. Lie out on a table, take a 4-inch round cutter and cut out a circle and repeat 24 times.

Mixture in the cups sprinkle cumin seed on top and bake in a
Pre-warmed oven at 400o for 10 -12 minutes or until golden
Brown.
