Kobe Beef Carpaccio with Pickled Onions

serves 2

*4oz "Kobe Beef" Strip loin Cleaned , Wrapped and Frozen ½ C. Extra Virgin Olive oil
2 Tb Minced Shallots
2 Tb Mince Chives
2Tb small dice tomatoes
1 oz Parmesan Reggiano shaved
*1.5 oz Thin Sliced pickled Pearl onion
Onion Sprouts to Garnish
Salt and Pepper to Taste

On a large flat clean plate, Slice the frozen Beef Paper thin onto the plate. Dress Kobe Beef with all Garnishes, olive oil first, garnish with onion sprouts and season to Taste
