Vegetable Chips :
Ingredients
1 Medium size Taro root peeled
1 carrot peeled
1 sweet potato peeled
1 blue potato peeled
1 russet potato peeled
1 small celery root peeled
1 parsnip peeled
1 zucchini (only use the peel of the skin)
1 - 6 inch corn tortilla
rice bran oil or sunflower oil
Procedures
1. Place oil in a deep fryer and heat to 350°F.
2. Slice all vegetables thinly (perhaps a bit thicker than a potato chip).
3. Fry the sliced vegetables in small batches until lightly golden (about 2 minutes).
4. Drain on paper towels and salt lightly.
