Braised Thai Snapper with Japanese Plum , Sake and Potatoes

Serves 12

6-6oz Thai snapper filet scaled and Pin boned
12 pieces ume boshi plum (Japanese Pickled Plum)
12 Finger Potato sliced Very thin
12 mushrooms Scliced Very thin (Optional)
2 cups Sake
4 TBSP Butter
4 Tbsp olive Oil
S&P

in a pan on the add all of the Ingredients above on top of the stove bring up to a small simmer , Cover and cook for 6-10 Min until fish is tender .
take out of pan and let rest reduce liquid by ¾ and add butter and olive oil at the end
