  • 1 Cup Extra Virgin Olive oil
  • 1 Head Romaine Lettuce Leafs

  • 1/8th Cup Red wine Vinegar
  • Juice of 2 Lemons
  • 4 shakes of Tabasco
  • 1/4 Teaspoon Worcestershire sauce
  • 1 1/2 unsalted Sweet Butter
  • 1 Cups Tomatoes Chopped Fine
  • 2-Teaspoon Dijon Mustard
  • 2 oz Grated Parmesan Cheese
  • 1/2 Cup Shaved Parmesan Cheese
  • Salt

2003 Lobster Challenge - Lobster Shabu-Shabu

Ingredients:

Curry:

  • 1 qt. Water
  • 1 C. Light soy sauce
  • ¸ Of a medium onion
  • ¸ A bunch chrysanthemum leaves
    (Found at most Asian super market)
  • 3 pieces Leaves romaine lettuce hearts
  • 5 pieces Fresh shiitake mushrooms
  • 1/2 Bunch green onions
  • 5 pieces Asparagus (thin)
  • 12 oz. Shiratake noodles
    (Yam noodles found in most Asian super markets)

Jer-ne Vegetable Nabe

Ingredients:

  • 1 lb. firm tofu, pressed, drained and cubed
  • 1 head Napa cabbage, cut into 2 inch pieces
  • 4 creamer or small red boiler potato, pre-cooked
  • 1 onion, cut into large dice
  • 4 green onions cut into 3 inch pieces
  • 6 large fresh shiitake mushrooms
  • 1 small piece ginger, peeled and sliced
  • 1 small Japanese eggplant, cut into 4 pieces
  • 2 Tablespoons of white miso (available at an Asian Market or health food store)
  • 1 peeled carrot, cut thinly on a diagonal

Black Sesame Curry Hot Pot

Ingredients:

Curry:

  • 1 large onion, cut into eighths
  • 3 cups vegetable or vegetable stock
  • 2 cloves of garlic crushed
  • 1 1/2 teaspoon cumin seed
  • 1 1/2 teaspoon coriander seed
  • 1/2 teaspoon ground tumeric
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon cayenne pepper (depending on spiciness of dish)
  • 1 carrot, peeled and chopped
  • 1 tomato, cut in quarters
  • 1 granny smith apple, peeled and sliced

Lamb Chops with Blue Cheese Fondue

This is a signature dish that you can also enjoy at home during a barbeque or a nice warm summer night. It requires just a few tools and some patience. You'll need a rack of lamb, I recommend Australian lamb because you can find it at most supermarkets, but American lamb is also very good.


1 rack of lamb ( a rack feeds about 2 people, 3-4 chops each)
3 cups good blue cheese
1/2 cup whole milk
1 large sweet onion

Smoked Paprika Oil

Ingredients:

  • 2C. Grape seed oil
  • 1C. Sweet smoked paprika

Instructions:

  1. Pour paprika and oil together in a bottle and shake.
  2. Let sit over night so that paprika settles on the bottom of the bottle.
  3. Pour the clear oil off from the top and use sparingly.

Morel Mushroom Sauce

Ingredients:

  • 2lbs Fresh mushrooms (Morels, Shittake, Enoki, Oyster, Eringi)
  • 1/4lb. Butter
  • 2C. Madeira wine
  • 2C. Chicken stock
  • 2 Whole shallots, chopped
  • 1C. Cream
    Salt and pepper to taste
  • 1C. Whipped cream
    Chives and tomato concase to garnish
