Slice apple 1/4 off the Top. Core apples, taking enough out to hold custard. Set aside. Bring Soy milk, cream, sugar, vanilla and cinnamon up to a boil, whisk into eggs and cool down. Strain. then Ladle into apples, fill apple up to top with Custard mix. Put apples in a 2 inch Sided pan then fill 1/2 way with warm water Place in oven and bake at 350 for 45 min. or until custard has set. Test for doneness, Sprinkle with Granulated sugar. Burn the sugar with a torch and serve.
Bring Soy Milk, Cream and Sugar to a Boil. Put Egg yolks in a bowl and Temper the hot Liquid into the eggs. Add Pistachio nuts and let Steep 5 Min. Blend in a Blender till Purreed. Stir Mixture on a Double Boiler till it Coats a Spoon. Cool down, strain and freeze in ice cream Machine.
